Jamaican Bean Salad
Ingredients:

400g Tinned mixed beans (drained)
½ Large red pepper diced
½ Large red onion diced
½ Large courgette diced
50g Baby leaf spinach
20g Coriander (chopped)
2 tbsp Honey
3 tbsp YR sauce

Cooking Time:


10 minutes
Method:


  1. Roast the pepper, onion and courgette together for 10 minutes at 150°C once cooked allow to cool.
  2. Mix the cooled vegetables with all other ingredients and season. Once everything is well mixed transfer to plates for serving.
